Pruning the vine in double guyots:
It is a pruning method favoring better exposure to the sun and optimal aeration of the grapes which allows a controlled yield for concentrated and complex wines.
Principles of pruning in double guyots:
- Double guyots pruning consists of leaving two spurs on each vine.
- Each bud bears one or two frank eyes, which are the buds which will give rise to the branches which will bear the grapes.
- Arching and trellising: The branches are then attached to a wire, bending them into an arc shape.
Overripe harvest:
Concentration of sugars and flavors
Over-ripening allows the grapes to naturally concentrate their sugars and aromas.
This results in richer, smoother and more expressive wines. White grape varieties from Alsace, such as Gewurztraminer, Riesling and Pinot Gris, are particularly suitable for over-ripening.
Development of aromatic complexity
In fact, this process promotes the development of complex and intense aromas.
We find notes of candied fruits, spices, honey and white flowers in wines made from overripe grapes.
This aromatic complexity is particularly appreciated by lovers of dry and sweet white wines.
Exceptional aging potential
The concentration of sugars and aromas gives overripe wines exceptional aging potential.
Certain wines can improve for several years, even several decades.
This ability to age is an important asset for Alsace wines, which are often appreciated for their longevity.
A unique and distinctive style
Over-ripened wines contribute to the diversity and richness of Alsace wines.
They offer a unique and distinctive style, appreciated by wine lovers around the world.
Over-ripening is an ancestral technique which is an integral part of the Alsatian wine heritage.
Favorable climatic conditions
Alsace benefits from a dry and sunny climate, particularly favorable to the over-ripening of the grapes.
The warm days and cool nights allow the grapes to ripen slowly and develop complex aromas.
The Alsatian vineyard is one of the rare vineyards in France where over-ripening is practiced on a regular basis.
Work in the cellar: a demanding passion
It is in our cellar, a true sanctuary of know-how, that Alsace wines are born. Guided by our passion and our respect for the terroir, we work every year to reveal the quintessence of each grape.
Winemaking: ancestral know-how combined with modernity
- Vinemaking begins with slow and gentle pneumatic pressing, a modern technique which preserves the finesse and delicate aromas of the grapes.
- Fermentation then takes place in thermoregulated vats, allowing precise control of the temperature and optimal extraction of aromas.
- The filtration of lees allows natural clarification for clear and elegant wines and this stabilizes them by eliminating micro-organisms which could alter their taste and quality.
Wines that need to age:
Time is an essential element in the creation of our over-ripe wines. Indeed, years of aging after bottling allow them to reach their peak, offering an explosion of aromas and a velvety texture that will delight lovers of exceptional wines. But nothing stops them from consuming them today
