Wines aged in wooden barrels at the Cave des Hospices de Strasbourg

On the same principle as the Hospices de Beaunes, these are wines from our own harvest and vinified in the cellar at Domaine Hertzog. They have the merit of having the potential to be aged in the historic cellar of the Hospices de Strasbourg for 6 to 10 months before being bottled. The passage in oak barrels gives more finesse to the wines as well as a better longevity. They structure and develop their field of aromatic expressions and take on a discreetly woody note.

The cellar of the Hospices de Strasbourg has been located under the civil hospital for centuries.

In this historic cellar are stored Alsatian wines from our own harvest and vinified in the cellar at Domaine Hertzog. During a blind tasting, they were judged to have the potential to be matured in the historic cellar of the Hospices de Strasbourg.

A 6 to 10 month ageing in the cellar will be sufficient before being bottled on site. The passage in oak barrels gives the wines more finesse and a longer life. They become more structured and develop their range of aromatic expressions and take on a discreetly woody note.

A little anecdote: during their time in wooden barrels, they have the prestige of rubbing shoulders with the "oldest wine in the world" which dates back to 1472. On the same principle as the Hospices de Beaune, the cellar is hidden in the grounds of the current Hôpital Civil de Strasbourg.
